Why are we making such a fuss about 2 Tablespoons of fluid?

As a scientist and a Mom, I would definitely not have the strainer basket with the hidden cavity in my home. Microbes such as Salmonella, Campylobacter, Clostridium and Staphylococcus live inside the gut and skin of poultry and these are exposed during processing. Chilling can only reduce the rate of reproduction and if juice from a thawed poultry remained in the strainer basket, it takes just 3 days to multiply and form a biofilm. This consortia of microbes is a source of cross contamination and a drop of this juice on cooked food or cooked poultry can cause food poisoning. Young children and people with underlying health condition are at greatest risk. The fatality depends on the severity of the symptoms and the age group or health of the victim. Food poisoning can cause severe dehydration, in which case the victim needs to be hospitalized.

A hidden cavity in the largest selling strainer basket in the world is a really bad idea. Especially when bacteria are growing teeth. Somehow, it has been tolerated by an apathetic kitchen industry. Every year, millions of these go into homes. It might be wise to inform family and friends.
